Eat My Kitchen Challenge Day 7

This is a challenge where I only eat at home for 7 days, using up as much of the food in kitchen as possible to cut back on food waste and save money. For more details, check out the intro post or days one, two, three, four, five or six.

Intro thoughts:

This was a big eat up pre-made food day. Perfect for the last day of this challenge!

Weirdest things I found in my kitchen on day 7:

Two things of pork fat, packaged like meat, with the meat in my freezer. They’re from a farm I buy pork from and came in some mixed package of pork. I always tell myself I’m going to use them, but it’s just so much fat!!

Prep:

Nothing new today. This was really a day of eating up food made earlier in the challenge.

Food log:

Coffee from my cold brew maker

Pot pie I made yesterday with some buffalo sauce from earlier in the week drizzled on top

The rest of the donuts I made yesterday

Eggplant “Parm” from earlier in the week with boiled, dried noodles (ie a box of pasta)

A late ‘snack’ of sauteed random veg and eggs
