Eat My Kitchen Challenge Day 2

This is a challenge where I only eat at home for 7 days, using up as much of the food in kitchen as possible to cut back on food waste and save money. For more details, check out the intro post or day 1.

Weirdest things I found in my kitchen on day 2:
-Granola bars and chocolate covered coffee beans I bought in December 2019 (I know because of where they’re from). Not bad, fyi.
-All the products from when I was on keto in Jan 2019, like MCT oil, powdered protein and multiple kinds of artificial sweetener

Best things I found:
-3 unopened bags of tortilla chips
-multiple unopened cans of salsa (plus two open ones)

New thoughts:

Some worry has started to creep in. What am I going to eat at night when my cereal is done? I don’t have ice cream, cookies, etc. Not even yogurt.

Prep:

I made buffalo sauce, because I was so amused about having so much hot sauce. But I was lazy and didn’t prep anything else for later.

Food log:

Coffee from my cold brew maker and water

Matzah ball soup (prepped yesterday) with eggs and greens

Cornish hen (just one found in freezer, most likely from Friendsgiving 2019) with stuffing (also found frozen) made into stuffing muffins and leftover Brussels sprouts from yesterday

Candy corn I bought last week. I know it’s gross, but I love it.

A mix of two kinds of cereal with milk and frozen blueberries.
